Prior to The Cove’s opening in 2012, as the resort was hiring new staff and developing its signature dining concepts, a Balinese sous chef with a background in sushi joined the resort’s culinary team. At the time, the resort’s owner and food and beverage manager had already developed close relationships with local farmers, fishermen and purveyors and were incorporating local ingredients into many of The Cove’s unique dishes. Soon, The Cove’s chefs began combining fresh seafood and local produce into innovative rolls and an à la carte sushi menu was developed and tested at the restaurant.
The sushi was a huge hit with guests and sparked the development of a more robust sushi offering. The menu was expanded, a sushi bar was built within Freedom Restaurant, and a top chef from the famed Nobu restaurant came on board as the resort’s head sushi chef. Today, sushi at The Cove continues to surprise and delight guests! With an ever-changing menu, fresh ingredients and one-of-a-kind rolls, our sushi is truly special and absolutely delicious.
